This study investigates the concentrations of macro elements, including calcium (Ca), potassium (K), magnesium (Mg), and sodium (Na), in baobab fruit pulp collected from two different African countries. The first sample (SUD) was collected from Sudan, and the other two samples were obtained from Senegal (SEN1), and Senegal (SEN2). Experimental analysis was performed using ICP-OES at the Food Science Institute laboratory, located at the University of Debrecen in Hungary. One-way analysis of variance (ANOVA) was used to ascertain the influence of study areas on elemental content at a 5% significance level. Magnesium was highest in SEN1 (198 mg/100 g). Sodium, Calcium, and Potassium demonstrated variations across the different areas, and the highest mean concentration for all was observed in SUD (6.38 mg/100 g), (329 mg/100 g) and (1907 mg/100 g) respectively. The findings shed light on the elemental composition of baobab fruit pulp across Africa, providing valuable insights for nutritional research, as well as for the sustainable utilization of this highly significant fruit resource in terms of human diet and health.
