Carbohydrates are the most important components of the diet for meeting human energy needs. Their digestible part has a significant role in the body's energy supply, and their indigestible part has a specific nutritional function as dietary fiber. One of the most important questions in food processing is how we can influence the technological and nutritional properties of carbohydrates in such a way that they better meet modern dietary needs, especially with regard to food-related health issues, overweight, obesity and nutrition. During the production of RS, physical processes are preferable to chemical methods, because in many cases there is no need for major intervention in the technology, and a moderate modification of the technology can result in a significant change in the digestibility and nutritional properties of the starch. During the presentation, the authors present novel results concerning the physical methods of food processing and RS production, the nutritional and technological properties of RS, and the starch and dietary fiber content of plant-based foods.
