Megjegyzések:	Many and often emphasize the importance of quality production and the improvement o f quality, but few say about what is worthimproving and what quality is justified to produce. Fewer because there are different quality categories in the course o f value chain.Judgement can be different in case of producers, processers and distributors. After all, the fin a l ?quality controller" is the consumer.The question is how the consumers' judgement appears in the earlier stages o f value chain, who can do and what can be done in orderto improve quality. Besides this the question o f the costs o f quality is unrevealed as well, what is the economically optimum quality?The study raises problems in the milkverticum, but similar and more detailed examinations are necessary in the other branchesas well. It is justified to deal with the quality categories o f animal products as a whole because this is the only way to meet theconsumers' expectations in some elements o f the value chain process, and together with this to meet the solvent demand better.
