Megjegyzések:The aim of the study was to investigate changes of photosynthetic effi ciency, amount of photosynthetic pigments, superoxide dismutase (SOD) enzyme activity, and rate of lipid peroxidation in bean?rust interaction. The clarifi cation of the role of the above changes involved in the defence mechanism can signifi cantly contribute to the breeding of plant varieties with natural resistance. Consequently, the amount of chemicals used in food production can be signifi cantly reduced. In the present study some principal physiological parameters, such as the relative chlorophyll content of the host plant, the amount of photosynthetic pigments, changes in photosynthetic effi ciency, and the activity of superoxide-dismutase (SOD) in addition to rate of lipid peroxidation (LP) were measured. The experiment was conducted in a humidity tent. Signifi cant decrease in the relative chlorophyll content and in the amount of photosynthetic pigments was measured. At both sampling times, an increase was found in superoxide-dismutase enzyme activity and in rate of lipid peroxidation due to the bean rust infection. Notably, in several cases the differences were signifi cant. The results indicate that the above parameters have important role in the bean?rust interaction, which should be taken into consideration in resistance breeding.

Megjegyzések:In this study we examined the proline content of 143 honey samples with different fl ower origin. Some of thesamples originated from commercial trade, the others came directly from beekeepers. We measured the prolinecontent of beekeepers' honeys and the received results were compared to the results of commercial honeys. Theeffects of added sugar products and heating on the quality parameters were also studied.

Megjegyzések:The fatty acid composition of cow's milk with fat contentsof 3.6%, Dalia cheese with fat contents of 44%, butter with fat contentsof 80% and margarine with fat contents of 24% was determined after aheat treatment performed on cooking plate and microwave treatment,respectively of different durations. The biggest difference was obtainedfor oleic acid and elaidic acid since with the exception of the margarinein each case proportion of the cis-configurated oleic acid decreased whilethat of the trans-configurated elaidic acid increased. For all of the otherfatty acids in the foodstu?s examined no such differences were obtainedregarding change in fatty acid composition, which differences could in-?uence healthy nutrition to considerable extent, therefore we can take itas a fact that neither heat treatment performed on a traditional cookingplate nor microwave treatment affects considerably the composition offood fats.

Megjegyzések:The purpose of the research was to determine the fatty acidcomposition of milk of general varieties in Hungary that is HungarianSimmenthal, Red Holstein Friesian and Black Holstein Friesian and the changes in the fatty acid composition of their milk fat throughout theyear with special respect to the conjugated linoleic acid content. Theamount of unsaturated fatty acids (oleic acid, linoleic acid and linolenicacid) including conjugated linoleic acid was higher in summer than inwinter. In the case of the saturated fatty acids (butyric acid, caproicacid, caprylic acid, capric acid, myristic acid, palmitic acid and stearicacid) an opposite tendency has been shown. The amount of conjugatedlinoleic acid ranged from 0.8 to 1.4%, with an average value of 1.1%.
