Megjegyzések:Background: The increased health consciousness of consumers opened new avenues for food research and development. In our study, we supplemented the drinking water of lambs with magnesium (Mg) and selenium (Se) to develop a potential functional food. Methods: Fifty-one Hungarian Merino lambs were allocated into three groups drinking Mg/Se/non-supplemented water. After slaughtering animals, carcass classification and fatty acid ratios of the meat were determined. We also investigated the Mg and Se levels of ready-to-eat food. In the second part of the study, healthy human volunteers (n=39) consumed the lamb meat three times per week for 6 weeks in total. Results: Based on our results, Mg-supplementation did not lead to higher Mg levels in the lamb meat; nevertheless, it increased extramuscular and intramuscular fat content significantly (p<0.005). On the contrary, Se-supplementation with 20 ?g?L-1 concentration increased Se content in the meat (p=0.011), and also increased the proportions of monounsaturated fatty acids (MUFA) (p=0.001). The investigated blood parameters of healthy human volunteers did not change in any group. The attitude of consumers towards lamb meat changed strongly during the study period. Discussion: Our results underline the extreme importance of proper information about healthy foods in increasing the market share. Some MUFA rich diets are beneficial for consumers' health; consequently, selenium supplementation for lambs may lead to a new type of functional food.
